Instructions
- Prepare the Sausage:

- Prepare the Eggs:
- In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- If the sausage pan doesn’t have enough drippings, add the tablespoon of butter and melt over medium heat.
- Pour the egg mixture into the pan.
- Cook, stirring occasionally, until eggs are scrambled and just set but still slightly moist, about 3-4 minutes.
- Remove from heat and stir in the cooked sausage and shredded cheese.
- Assemble the Roll-Ups:
- Warm the tortillas slightly in the microwave (about 15-20 seconds) to make them more pliable.
- Place a tortilla on a clean work surface.
- Spoon about 1/2 cup of the sausage, egg, and cheese mixture onto the lower third of the tortilla.
- Sprinkle with green onions and any additional toppings if using.
- Fold the sides of the tortilla in, then roll from the bottom up, tucking in the sides as you go, to form a tight roll.
- Repeat with remaining tortillas and filling.
- Toast the Roll-Ups (Optional):
- Heat a clean, dry skillet over medium heat.
- Place the roll-ups seam-side down in the skillet.
- Cook for 1-2 minutes per side until golden brown and crispy.
- Cut in half diagonally and serve immediately.
