  • Yield: 6 roll-ups 1x
  • Diet: Low Calorie

Description

These delicious Sausage Egg Cheese Breakfast Roll-Ups combine savory sausage, fluffy eggs, and gooey melted cheese all wrapped in a warm tortilla. Ready in under 30 minutes, they’re perfect for busy mornings, weekend brunches, or make-ahead meal prep.

Ingredients

Scale
  • 1 pound breakfast sausage (pork or turkey)
  • 8 large eggs
  • 1/4 cup milk
  • 1 tablespoon butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese (or your favorite cheese blend)
  • 6 large (10-inch) flour tortillas
  • 1/4 cup chopped green onions (optional)
  • 1/4 cup diced bell peppers (optional)
  • Hot sauce to taste (optional)

Instructions

  1. Prepare the Sausage:
    • Heat a large skillet over medium heat.
    • Add the breakfast sausage to the pan, breaking it up with a wooden spoon.
    • Cook for 5-7 minutes until the sausage is browned and cooked through.
    • Transfer the sausage to a paper towel-lined plate to drain excess fat, but reserve about 1 tablespoon of drippings in the pan.
  2. Prepare the Eggs:
    • In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined.
    • If the sausage pan doesn’t have enough drippings, add the tablespoon of butter and melt over medium heat.
    • Pour the egg mixture into the pan.
    • Cook, stirring occasionally, until eggs are scrambled and just set but still slightly moist, about 3-4 minutes.
    • Remove from heat and stir in the cooked sausage and shredded cheese.
  3. Assemble the Roll-Ups:
    • Warm the tortillas slightly in the microwave (about 15-20 seconds) to make them more pliable.
    • Place a tortilla on a clean work surface.
    • Spoon about 1/2 cup of the sausage, egg, and cheese mixture onto the lower third of the tortilla.
    • Sprinkle with green onions and any additional toppings if using.
    • Fold the sides of the tortilla in, then roll from the bottom up, tucking in the sides as you go, to form a tight roll.
    • Repeat with remaining tortillas and filling.
  4. Toast the Roll-Ups (Optional):
    • Heat a clean, dry skillet over medium heat.
    • Place the roll-ups seam-side down in the skillet.
    • Cook for 1-2 minutes per side until golden brown and crispy.
    • Cut in half diagonally and serve immediately.

Notes

  • Don’t overcook the eggs – remove them from heat when they’re still slightly moist as they’ll continue cooking with residual heat.
  • Warm your tortillas before rolling to prevent cracking and make them more pliable.
  • Let the filling cool slightly before assembling to prevent the tortillas from becoming soggy.
  • For the best results, use freshly shredded cheese rather than pre-packaged shredded cheese, as it melts more smoothly.
  • Roll tightly and tuck in the sides as you go to prevent filling from escaping.
  • For meal prep, wrap each roll-up individually in parchment paper before placing in a storage container.
