- 2 green onions, sliced (separate white and green parts)
- 1 cup mushrooms, sliced (shiitake or cremini work well)
For Garnish:
- Extra chopped fresh herbs (parsley, thyme)
- Lemon wedges
- Crushed red pepper flakes
- Grated parmesan cheese (optional)
Instructions
Step 1: Marinate the Steak
- In a medium bowl, combine the sliced steak, soy sauce, Worcestershire sauce, black pepper, and brown sugar.
- Mix well to ensure all pieces of steak are evenly coated.
- Let the steak marinate for at least 15 minutes (or up to 4 hours in the refrigerator for deeper flavor).
Step 2: Cook the Noodles
- Bring a large pot of salted water to a boil.
- Cook the lightning noodles according to package instructions until al dente.
- During the last 2 minutes of cooking, add the broccoli florets to blanch them quickly.
- Drain the noodles and broccoli, reserving 1/2 cup of the cooking water. Rinse under cold water to stop the cooking process.
Step 3: Cook the Steak
- Heat a large skillet or wok over high heat until very hot.
- Add 1 tablespoon of vegetable oil and swirl to coat the pan.
- Working in batches to avoid overcrowding, add the marinated steak slices in a single layer.
- Cook for 1-2 minutes per side until nicely browned but still slightly pink in the center.
- Transfer the cooked steak to a clean plate and repeat with remaining steak.
Step 4: Make the Garlic Butter Sauce
- In the same pan, reduce heat to medium and add the butter.
- Once the butter has melted, add the minced garlic and white parts of green onions.
- Sauté for 1-2 minutes until fragrant but not browned.
- Add the red pepper flakes, fresh thyme, and lemon zest.
- Cook for another 30 seconds, stirring constantly.
Step 5: Cook the Vegetables
- Add the sliced bell peppers and mushrooms to the pan with the garlic butter.
- Sauté for 3-4 minutes until the vegetables begin to soften.
Step 6: Combine Everything
- Return the cooked steak to the pan along with any accumulated juices.
- Add the cooked noodles and broccoli.
- Pour in the lemon juice and toss everything together.
- If the mixture seems dry, add a splash of the reserved noodle cooking water.
- Cook for 1-2 minutes until everything is heated through and well combined.
- Taste and adjust seasoning with salt and pepper as needed.
Step 7: Serve Your Garlic Butter Steak Lightning Noodles Recipe
- Remove from heat and stir in the fresh parsley and green parts of green onions.
- Transfer to serving plates or a large platter.
- Garnish with extra herbs, lemon wedges, and a sprinkle of red pepper flakes.
- Add grated parmesan cheese if desired.
- Serve immediately while hot.
Notes
For a gluten-free option, use rice noodles or gluten-free ramen and tamari instead of soy sauce.
Freeze the steak for 15-20 minutes before slicing to make it easier to get thin, even slices.
Don’t overcook the noodles as they’ll continue cooking when added back to the pan.
For extra flavor, deglaze the pan with a splash of white wine before adding the butter.
Make your own lightning noodles by mixing baking soda with egg noodles (1 tsp baking soda per 8 oz noodles) if you can’t find them.
