  • Author: basmer
  • Total Time: 50 minutes
  • Yield: 16 brookies 1x

Description

These fudgy chewy brookies combine the best of both worlds – rich, fudgy brownies and chewy chocolate chip cookies in one delicious treat! Perfect for anyone who can’t decide between brownies and cookies.

Ingredients

Scale
  • For the Brownie Layer:
  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup (64g) all-purpose flour
  • 1/2 cup (50g) unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup (90g) chocolate chips or chunks
  • For the Cookie Layer:
  • 1/2 cup (113g) unsalted butter, softened
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (100g) light brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/4 cups (156g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (180g) chocolate chips

Instructions

  1. Prepare: Preheat your oven to 350°F (175°C). Line an 8×8 inch square baking pan with parchment paper.
  2. Brownie Layer: In a medium bowl, whisk together the melted butter and granulated sugar until well combined. Add eggs one at a time, then vanilla. Sift in flour, cocoa powder, and salt. Fold in chocolate chips. Spread evenly in the pan.
  3. Cookie Layer: Cream together butter and both sugars until fluffy. Beat in egg and vanilla. Mix flour, baking soda, and salt in a separate bowl, then gradually add to wet ingredients. Fold in chocolate chips.
  4. Assemble: Drop spoonfuls of cookie dough over the brownie layer, gently pressing to create an even top layer.
  5. Bake: Bake for 25-30 minutes, until cookie top is golden and a toothpick comes out with a few moist crumbs.
  6. Cool: Allow brookies to cool completely in the pan before cutting into squares.

Notes

  • For extra fudgy brownies, slightly underbake your brookies.
  • Use room temperature eggs for better incorporation.
  • Don’t overmix either batter once the dry ingredients are added.
  • For bakery-style brookies, add a sprinkle of flaky sea salt on top before baking.
  • Refrigerate for an hour after cooling for clean-cut brookies.
