These soft and chewy banana bread cookies combine all the beloved flavors of traditional banana bread in a convenient cookie format. Ingredients
- 3 large overripe bananas (about 1 cup mashed)
- ½ cup (1 stick) unsalted butter, softened
- ¾ cup light brown sugar, packed
- 1 large egg, room temperature
- 1 teaspoon pure vanilla extract
- 1¾ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- ¼ teaspoon nutmeg
- ¾ cup mini chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a medium bowl, mash bananas with a fork, leaving some small lumps for texture.
- In a large bowl, cream softened butter and brown sugar with electric mixer for 2-3 minutes until light and fluffy.
- Beat in egg and vanilla extract until well combined.
- Fold mashed bananas into butter mixture using a wooden spoon.
- In separate bowl, whisk together flour, baking soda, cinnamon, salt, and nutmeg.
- Gradually add dry ingredients to wet ingredients, mixing until just combined. Don’t overmix.
- Fold in chocolate chips if using.
- Drop rounded tablespoons of dough onto prepared baking sheets, spacing 2 inches apart.
- Bake 12-15 minutes until edges are lightly golden but centers still look slightly underbaked.
- Cool on baking sheet for 5 minutes before transferring to wire rack.
Notes
For best flavor, use very ripe bananas with brown spots. Don’t overbake – cookies should look slightly underdone in centers for perfect soft texture. Store in airtight container for up to 1 week. Dough can be made ahead and refrigerated up to 24 hours or frozen for up to 3 months.
