  • ½ cup (1 stick) unsalted butter, softened
  • ¾ cup light brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¼ teaspoon nutmeg
  • ¾ cup mini chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, mash bananas with a fork, leaving some small lumps for texture.
  3. In a large bowl, cream softened butter and brown sugar with electric mixer for 2-3 minutes until light and fluffy.
  4. Beat in egg and vanilla extract until well combined.
  5. Fold mashed bananas into butter mixture using a wooden spoon.
  6. In separate bowl, whisk together flour, baking soda, cinnamon, salt, and nutmeg.
  7. Gradually add dry ingredients to wet ingredients, mixing until just combined. Don’t overmix.
  8. Fold in chocolate chips if using.
  9. Drop rounded tablespoons of dough onto prepared baking sheets, spacing 2 inches apart.
  10. Bake 12-15 minutes until edges are lightly golden but centers still look slightly underbaked.
  11. Cool on baking sheet for 5 minutes before transferring to wire rack.

Notes

For best flavor, use very ripe bananas with brown spots. Don’t overbake – cookies should look slightly underdone in centers for perfect soft texture. Store in airtight container for up to 1 week. Dough can be made ahead and refrigerated up to 24 hours or frozen for up to 3 months.
