For the Bowl Base:
- 2 cups cooked quinoa (or brown rice)
- 2 cups fresh baby spinach or mixed greens
- 1 cucumber, diced
- 1 pint cherry tomatoes, halved
- 1 bell pepper (any color), diced
- ½ red onion, thinly sliced
- ½ cup kalamata olives, pitted and halved
- ½ cup crumbled feta cheese
- ¼ cup fresh parsley, chopped
For the Tzatziki Sauce:
- 1 cup Greek yogurt
- ½ cucumber, grated and excess water squeezed out
- 2 cloves garlic, minced
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried)
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- ¼ teaspoon salt
- Pinch of black pepper
Instructions
Step 1: Marinate the Steak
- In a bowl, combine olive oil, minced garlic, oregano, cumin, smoked paprika, salt, pepper, and lemon juice.
- Place the steak in a large ziplock bag or shallow dish and pour the marinade over it.
- Massage the marinade into the steak, ensuring it’s evenly coated.
- Allow to marinate for at least 15 minutes at room temperature (or up to 4 hours in the refrigerator for deeper flavor).
Step 2: Prepare the Tzatziki Sauce
- In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, dill, olive oil, lemon juice, salt, and pepper.
- Stir well to combine all ingredients.
- Cover and refrigerate until ready to use, allowing flavors to meld together.
Step 3: Cook the Steak
- Heat a grill pan or cast-iron skillet over medium-high heat until very hot.
- Remove steak from marinade and pat dry with paper towels.
- Place steak in the hot pan and cook for 4-5 minutes per side for medium-rare (adjust time for desired doneness).
- Transfer steak to a cutting board and let rest for 5-10 minutes before slicing against the grain into thin strips.
Step 4: Assemble Your Mediterranean Steak Bowls
- Divide cooked quinoa or brown rice among 4 bowls.
- Top with fresh greens, creating a bed for the other ingredients.
- Arrange sliced steak and all prepared vegetables in sections around the bowl.
- Sprinkle with crumbled feta cheese and fresh parsley.
- Drizzle generously with tzatziki sauce or serve on the side.
Notes
For meal prep: Store components separately in airtight containers for up to 3 days.
For the juiciest steak: Allow your meat to come to room temperature before cooking and always let it rest before slicing.
Time-saving tip: Cook the quinoa and prepare the tzatziki sauce up to 2 days in advance.
Dietary alternatives: For dairy-free option, substitute feta with dairy-free cheese and use coconut yogurt for tzatziki. For low-carb option, replace quinoa with cauliflower rice.
