Ingredients

Scale

For the Steak:

  • pounds flank steak or sirloin (trim excess fat)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • Juice of ½ lemon

For the Bowl Base:

  • 2 cups cooked quinoa (or brown rice)
  • 2 cups fresh baby spinach or mixed greens
  • 1 cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1 bell pepper (any color), diced
  • ½ red onion, thinly sliced
  • ½ cup kalamata olives, pitted and halved
  • ½ cup crumbled feta cheese
  • ¼ cup fresh parsley, chopped

For the Tzatziki Sauce:

  • 1 cup Greek yogurt
  • ½ cucumber, grated and excess water squeezed out
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • ¼ teaspoon salt
  • Pinch of black pepper

Instructions

Step 1: Marinate the Steak

  1. In a bowl, combine olive oil, minced garlic, oregano, cumin, smoked paprika, salt, pepper, and lemon juice.
  2. Place the steak in a large ziplock bag or shallow dish and pour the marinade over it.
  3. Massage the marinade into the steak, ensuring it’s evenly coated.
  4. Allow to marinate for at least 15 minutes at room temperature (or up to 4 hours in the refrigerator for deeper flavor).

Step 2: Prepare the Tzatziki Sauce

  1. In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, dill, olive oil, lemon juice, salt, and pepper.
  2. Stir well to combine all ingredients.
  3. Cover and refrigerate until ready to use, allowing flavors to meld together.

Step 3: Cook the Steak

  1. Heat a grill pan or cast-iron skillet over medium-high heat until very hot.
  2. Remove steak from marinade and pat dry with paper towels.
  3. Place steak in the hot pan and cook for 4-5 minutes per side for medium-rare (adjust time for desired doneness).
  4. Transfer steak to a cutting board and let rest for 5-10 minutes before slicing against the grain into thin strips.

Step 4: Assemble Your Mediterranean Steak Bowls

  1. Divide cooked quinoa or brown rice among 4 bowls.
  2. Top with fresh greens, creating a bed for the other ingredients.
  3. Arrange sliced steak and all prepared vegetables in sections around the bowl.
  4. Sprinkle with crumbled feta cheese and fresh parsley.
  5. Drizzle generously with tzatziki sauce or serve on the side.

Notes

For meal prep: Store components separately in airtight containers for up to 3 days.

For the juiciest steak: Allow your meat to come to room temperature before cooking and always let it rest before slicing.

Time-saving tip: Cook the quinoa and prepare the tzatziki sauce up to 2 days in advance.

Dietary alternatives: For dairy-free option, substitute feta with dairy-free cheese and use coconut yogurt for tzatziki. For low-carb option, replace quinoa with cauliflower rice.
