Ingredients

Scale
  • For the Salmon Bites:
  • pounds fresh salmon fillets (skin removed, cut into 1-inch cubes)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional, for extra heat)
  • For the Bang Bang Sauce:
  • ½ cup mayonnaise
  • ¼ cup Thai sweet chili sauce
  • 1 tablespoon sriracha sauce (adjust to your spice preference)
  • 1 tablespoon honey
  • 1 tablespoon fresh lime juice
  • Optional Garnishes:
  • Fresh cilantro or parsley, chopped
  • Green onions, thinly sliced
  • Sesame seeds
  • Red pepper flakes for extra heat

Instructions

  1. Prepare the Salmon: Pat salmon fillets completely dry with paper towels. Remove skin and cut into uniform 1-inch cubes.
  2. Season the Salmon: Place cubes in a bowl. Drizzle with olive oil. Combine all seasonings in a small bowl, then sprinkle over salmon and gently toss to coat evenly.
  3. Make the Bang Bang Sauce: In a medium bowl, whisk together mayonnaise, Thai sweet chili sauce, sriracha, honey, and lime juice until smooth. Set aside half for serving.
  4. Cook the Salmon:
    • Pan-Searing: Heat a non-stick skillet over medium-high heat with olive oil. Cook salmon 2-3 minutes per side until golden and crispy.
    • Air Fryer: Preheat to 375°F. Cook for 8-10 minutes, shaking halfway.
    • Baking: Preheat oven to 400°F. Bake 10-12 minutes, then broil 2-3 minutes for extra crispiness.
  5. Sauce the Salmon: Transfer cooked salmon to a bowl and gently toss with half of the prepared sauce.
  6. Serve: Arrange on a serving platter, drizzle with remaining sauce if desired, and garnish with herbs, green onions, and sesame seeds.

Notes

For extra crispy salmon bites, pat the fish completely dry before seasoning.

Adjust the spice level by increasing or decreasing the amount of sriracha in the sauce.

For a lighter version, substitute Greek yogurt for half the mayonnaise.

Leftover sauce keeps well in the refrigerator for up to a week and makes a great dip or salad dressing.
