Ingredients
Scale
For the Brownie Base:
- 3/4 cup (170g) unsalted butter
- 1 cup (175g) semi-sweet chocolate chips
- 1/4 cup (30g) unsweetened cocoa powder
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) brown sugar, packed
- 3 large eggs, room temperature
- 1 egg yolk
- 2 teaspoons vanilla extract
- 1/2 teaspoon salt
- 1 cup (125g) all-purpose flour
For the Strawberry Layer:
- 1 pound fresh strawberries, stems removed and halved
For the Chocolate Ganache:
- 1 1/2 cups (260g) semi-sweet chocolate chips (or high-quality chocolate bar, chopped)
- 3/4 cup (180ml) heavy whipping cream
- 1 tablespoon (14g) unsalted butter (optional, for shine)
Instructions
- Prepare the Brownie Base:
- Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper, leaving an overhang on two sides.
- In a large microwave-safe bowl, combine the butter and chocolate chips. Heat in 30-second intervals, stirring between each, until completely melted and smooth.
- Whisk in the cocoa powder until well combined, then set aside to cool slightly.
- Add both sugars to the chocolate mixture and whisk until incorporated.
- Beat in the eggs, egg yolk, vanilla extract, and salt until the mixture is smooth and glossy.
- Gently fold in the flour until just combined – do not overmix.
- Pour the batter into the prepared pan, spreading it evenly with a spatula.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs (but not wet batter).
- Allow the brownies to cool completely in the pan on a wire rack.
- Prepare the Strawberry Layer:
- While the brownies are cooling, rinse and dry your strawberries thoroughly.
- Remove the stems and cut each strawberry in half lengthwise.
- Once the brownies are completely cool, arrange the strawberry halves in a single layer on top of the brownie base, cut side down, pressing them slightly into the surface.
- Make the Chocolate Ganache:
- Place the chocolate chips in a medium, heatproof bowl.
- In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer at the edges (do not boil).
- Pour the hot cream over the chocolate and let it sit for 5 minutes without stirring.
- After 5 minutes, gently whisk the mixture until it becomes smooth and glossy.
- If using, add the tablespoon of butter and stir until melted and incorporated for extra shine.
- Allow the ganache to cool for about 5 minutes until slightly thickened but still pourable.
- Assemble and Set:
- Carefully pour the ganache over the strawberry layer, ensuring it covers all the strawberries.
- Use an offset spatula to gently spread the ganache if needed.
- Refrigerate the brownies for at least 1-2 hours, or until the ganache is completely set.
- Once set, use the parchment paper overhang to lift the brownies out of the pan.
- With a sharp knife dipped in hot water and wiped clean between cuts, slice into squares.
Notes
Pro Tips:
- Use high-quality chocolate for the richest flavor.
- Don’t overbake the brownies – they should be slightly fudgy in the center.
- Pat the strawberries completely dry after washing to prevent excess moisture.
- Chill your knife before cutting for clean slices through the ganache.
- For extra decadence, add 1/2 cup of additional chocolate chips to the brownie batter.
- These brownies are best consumed within 24 hours of assembly due to the fresh strawberries.
