This fried egg quesadilla is the perfect quick breakfast that’s packed with protein and ready in just 15 minutes! Featuring crispy tortillas and perfectly cooked eggs with melted cheese, it’s a satisfying meal for busy mornings, weekend brunches, or even a quick dinner.


Ingredients

  • 1 large flour tortilla (8-inch)
  • 2 large eggs
  • 1/4 cup shredded cheese (Mexican blend, cheddar, or Monterey Jack)
  • 1 tablespoon butter or oil for cooking
  • Salt and pepper to taste
  • Optional toppings: avocado slices, salsa, sour cream, chopped cilantro, hot sauce

Instructions

  1. Prepare Your Pan: Heat a non-stick skillet over medium heat. Add 1/2 tablespoon of butter or oil and let it melt until it shimmers.
  2. Cook Your Eggs: In a measuring cup, add 2 eggs with a pinch of salt and pepper, or add seasoning to taste. Beat with a fork. Add beaten eggs and swirl to spread evenly over the bottom of the pan. Cook until the bottom is set but the top is still slightly runny, about 2 minutes.
  3. Add the Tortilla and Cheese: Sprinkle the top of the eggs with half of your shredded cheese, then cover with a tortilla. The cheese will make the tortilla stick to the egg.
  4. Flip and Add More Cheese: Use a large spatula to get under the egg and quickly flip over. Sprinkle another 2 Tbsp of cheese or add cheese to taste.
  5. Add Optional Fillings: If you’re using additional fillings like bacon, sausage, or vegetables, now is the time to add them to one half of the quesadilla.
  6. Fold and Cook: Fold the tortilla in half. Sauté on both sides until golden brown, about 1-2 minutes per side. Adding a little extra oil or butter to the pan will help the tortilla get extra crispy.
  7. Serve and Enjoy: Remove from the skillet, cut into wedges with a pizza cutter or sharp knife, and serve warm with your favorite toppings.

Notes

For the best texture, tilt the pan, gently push one side of the egg away from the side of the pan without breaking it, and let the uncooked egg run onto the pan. Repeat with all 4 sides of the egg, cooking until the bottom is set.

Freshly grated cheese melts more smoothly than pre-shredded, which often contains anti-caking agents.

For a healthier version, you can use whole grain tortillas and cook in a dry skillet without additional oil.
